Red Wine Braised Pears

Serves four

4 Bosc pears, ripe but still firm
3 cups full bodied red wine
3/4 cup sugar
1 cinnamon stick

Preheat oven to 400 degrees.

In a pan large enough to hold eight pear halves in a single layer, bring wine, sugar and cinnamon to a boil and reduce by half.

Peel pears, cut in half and core. Place pears cut side down in wine, and baste. Place in oven, cooking for 20 ® 25 minutes or until pears are tender. Baste several times and turn pears over half-way through cooking process.

Pears can be served immediately, or cooled and then re-warmed for service. Use reduced red wine that pears are cooked in as a sauce.
